Stracciatella cake is a delicious Italian dessert made from chocolate sponge cake filled with whipped cream and sprinkled with cocoa powder.
The name comes from the word “stracciato” which means torn or shredded.
In short, it’s just like tiramisu but without coffee!
It can be served as an appetizer or dessert. It has become very popular in recent years because of its simplicity and ease to make at home.
As long as you have all the ingredients ready, this recipe takes only about 30 minutes to prepare.
Stracciatella White Chocolate Cheesecake Recipe
If you love cheesecake, then you’ll love this white chocolate cheesecake recipe. It’s creamy, rich, and delicious. The perfect dessert for any occasion.
Ingredients:
- 1 cup of all-purpose flour
- 2/3 cups sugar
- 4 eggs, separated
- ½ teaspoon salt
- ¼ cup unsalted butter at room temperature
- 1 tablespoon vanilla extract
- 6 tablespoons milk
- White chocolate filling:
- 12 ounces white chocolate
- 8 egg yolks
- ⅓ cup granulated sugar
- shards of chocolate
Directions:
- Preheat oven to 350 degrees Farenheit.
- Grease an 8-inch springform pan.
- Line bottom with parchment paper; grease again. Set aside.
- In a large bowl beat together flour and 2/3 cup sugar until well combined.
- Add 4 beaten egg whites and salt; mix just until blended.
- Stir in 1 tablespoon melted butter and vanilla.
- Spread batter evenly into prepared pan.
- Bake for 20-25 minutes or until golden brown around the edges.
- Remove from oven and let cool completely on a wire rack for 10-15 minutes.
- Meanwhile, prepare the cheesecake mixture by placing 12 oz. white chocolate on top of a double boiler over simmering water. Melt slowly stirring frequently until smooth.
- Let stand for 5-10 minutes. Beat remaining 6 egg yolks with ⅓ cup sugar until thickened slightly.
- Gradually add the hot melted chocolate mixture while beating constantly. Pour this melted chocolate mixture through a sieve set over a medium bowl.
- Refrigerate overnight.
To assemble the cake
- Remove the sides of the cooled crust.
- Place half of the cheese layer inside the crust.
- Top with the second half of the cheese layer.
- Cover the entire surface with about ¾ inch of heavy whipping cream.
- Gently spread it out so that you have even coverage. Sprinkle with ½ cup powdered sugar.
- Repeat procedure using rest of ingredients. Chill thoroughly before serving.
- Garnish with chocolate shards as desired. Enjoy!

How to Drizzle Chocolate
Chocolate drizzling can be tricky but not impossible.
Here are some tips when making my chocolate sauces.
First, make sure your chocolate has been tempered properly. If it hasn’t been tempered then it will melt too quickly and won’t coat the food very nicely.
Second, if you want to get fancy, try adding different flavors like coffee, mint, etc. It’s fun experimenting with new flavor combinations.
Third, don’t worry about getting every last drop off the spoon. Just keep going back and forth between the saucepan and the plate until there isn’t any more left.
Fourth, always remember to stir your chocolate after each addition because otherwise, it may start separating.
Fifth, once you’ve got everything mixed up, pour it right onto whatever you’re cooking. You’ll find that it coats things much better than pouring straight from the pot.
Sixth, if you need to reheat something later, put it in the microwave for 30 seconds at 50% power. This helps bring the chocolate back down to temp without burning anything.
Finally, never leave chocolate sitting out longer than 15 minutes. The heat causes it to separate which makes it hard to work with.
